White Chocolate Cupcakes

Delicious vanilla and white chocolate cupcakes ready to swirl with fruity strawberry and white chocolate buttercream!

Ingredients
- 226g Self-raising flour
- 226g Butter or low fat margarine (see note below)
- 226g Caster sugar
- 4 Medium eggs
- 1 Bourbon vanilla pod
- 60g Baking quality white chocolate buttons, chips or callets
Instructions
- Pre-heat oven to Gas Mark 3 / 325 F / 170 C.
- Line cupcake pan with 12 cupcake cases.
- In a bowl with a stand up mixer cream together the butter/margarine or sugar.
- Once creamed add in the eggs and mix until incorporated.
- In a glass bowl over a saucepan of simmering water melt down the white chocolate.
- When the white chocolate has fully melted add with the self-raising flower and seeds of a bourbon vanilla pod into the sugar, butter and egg mix. Stir until fully mixed.
- Separate the mix equally between the 12 cupcake cases filling to 2/3rds full.
- Bake for 20-25 minutes or until done!
Notes
- If using low fat margarine please check the packet to see if it is suitable for baking with!
