Skinny Buttermilk Pancakes

Ingredients= This recipe is gluten free but make sure all your products you buy are
1 cup Brown Rice Flour
1/3 Cup Almond Meal Flour
2 Tsp Baking Powder
1 Tbsp CornStarch
1/4 cup or less of splenda or sweetner
1/2 Tsp Salt
2 Large Eggs ( I used Egg beaters)
1 Tbsp Coconut Oil ( you can use any oil you prefer)
1 Tbsp HOney ( I used Sugar Free honey from Krogers) if you omit add sweetner
1 Tsp Pure Vanilla Extract
1 cup buttermilk ( I did research for replacements for buttermilk and the option that tasted good was yogurt-milk mixture.

Directions:

Use a measuring cup that is one cup and put a Vanilla or plain yogurt into it (think a 6 oz yogurt or around there), then fill it up with milk till the cup is full, that is your buttermilk replacer. You can also use white vinegar, cream of tarter or lemon juice as replacers but you need to mix them with milk in a certain ratio and yogurt worked for me. I used Vanilla Carbmaster from Kroger.
1/2 Tsp Butter Flavoring Extract
Cooking Spray
Maple syrup for serving   (there are sugar free kinds for this as well )

I used a big Griddle. You can make them all at once. Much easier.

In large bowl whisk together the flours, cornstarch, baking powder , sugar and salt.

In another bowl, melt the coconut oil, then add the buttermilk, eggs, honey and vanilla and butter extracts, whisk. Then add wet to dry and stir till combined.

Spray Nonsitck griddle with cooking spray.  I used 1/4 cup to scoop batter onto the griddle. I did not fill  it up all the way though. Cook until golden brown on bottom probably 1-2 minutes each side. I had two different batches from this. You can put on a baking sheet and keep warm in the oven while finishing the rest, but I just put them on our plates and ate them.
Makes about 12 Pancakes give or take a few with pouring size.  I think I got about 13 h
